Eggsactly!

These are the cutest little things to keep in your fridge.  Clinton Kelly made these the other day on The Chew. Make a batch on Sunday and then keep them in the fridge for breakfast on the go, lunch or even a snack.  Add spinach and make them a little healthier. xoxo

 

Ingredients
Egg Muffins
1 tablespoon Olive Oil
6 Eggs
4 Scallions (chopped)
1 Red Bell Pepper (diced)
1/4 cup Ham (chopped)
1/2 teaspoon Salt
1/4 teaspoon Freshly Ground Pepper

Directions
Preheat oven to 350°F.
In a large bowl, mix together all of the ingredients and stir until well combined. Pour into a lightly oiled muffin tin, and bake for 10-12 minutes, until “muffins” have cooked and set. Pop out and serve, or refrigerate and reheat to serve.
